Flor de Sal,
Irregular flakes of pure salt obtained in a completely natural manner. They are produced during the summer months using traditional techniques developed by salt workers over generations.
Their crisp texture and laminated aspect are the result of a particular production process. The flakes originate at the beginning of the evaporation process, when fine crystals appear floating on the surface. The crystals are harvested by hand before they fall to the bottom of the pans.
These flakes, apart from being produced in a privileged environment and landscape, are characterized by their extremely natural purity. The absence of industrial refining processes implies that they are rich in minerals and trace elements. Furthermore, their crisp texture and great capability to enhance the flavour of food make them very popular in haute cuisine.
